This potato cake recipe was brought across the plains by a young woman from Austria more than a hundred years ago.
Potato cakes are delicious served hot or cold with any kind of meat or with a salad.
- 6 medium potatoes
- 2 teaspoons salt
- ½ cup milk
- 2 eggs
- 1 cup flour
Wash and peel the potatoes. Use a fine grater to grate the potatoes. Combine the grated potatoes with the salt, milk, eggs, and flour. Melt the shortening in a skillet, and drop the potato mixture by the spoonful into the hot shortening. Fry the cakes until they are golden on both sides.
