Founded in 1868, 17th oldest city in Oregon, named for Baker County. Post Office established 27 March 1866 with William F. McCrary as postmaster. In 1911 the name was changed to "Baker" to conform to the new style adopted by the voters. The name was restored in a later election on 7 November 1989.

Baker City was settled for ranching and supply purposes rather than for gold.

Baker City is the county seat of Baker County since 1875.
